Sneaky Lactation Snickers

Why sneaky? Because these faux snickers are bursting with nutrition and milk-boosting ingredients (honestly you do not need to be breastfeeding to enjoy the benefits). From galactagogues like almond flour and brewer’s yeast, to healthy fats like tahini and olive oil, these small bars have you covered. Don’t forget to sprinkle with a bit of maldon salt for that *chef’s kiss*

Ingredients

Base layer:
2 cups almond flour
1/4 cup brewer’s yeast
1/4 cup maple syrup
2 tbsp olive oil (preferably organic) or organic coconut oil
Pinch of sea salt

Date caramel layer:
2 cups medjool dates, pitted (about 12-18 dates)
1/4 cup tahini or peanut butter
pinch of sea salt
1 cup peanuts, sliced in half or chopped

Chocolate shell:
3/4 cup dark chocolate chips or chopped chocolate bar
2 tablespoons organic coconut oil
Pinch of maldon sea salt for each bar

Recipe

Mix base layer ingredients together. Press into 9x9 pyrex pan lined with parchment paper until about 1/2-1 inch thick. Freeze for minimum 20 minutes. Meanwhile, boil a kettle with water and pour over pitted dates. Allow to sit for several minutes to soften. Once soft, drain water and add dates to food processor with tahini and salt. Blend until mostly smooth. Layer on top of almond base layer. Sprinkle on peanuts and gently press into the date caramel layer. Freeze for minimum 2 hours. Remove from freezer and slice into bar shapes. Remember that the chocolate will make them expand a bit, so you may want to slice them smaller than you think. Melt coconut oil and chocolate chips in bowl. Once slightly cooled, dip and roll bars in chocolate, allow excess chocolate to drip off, and place on parchment paper. Immediately sprinkle with maldon salt. Repeat until all bars are covered. Store in freezer and enjoy with a warm elixir!
